Bang Bang Shrimp – CE
Brown rice and green salad

Ingredients

Prep
  • 2 lbs large raw peeled shrimp
  • 1 T cornstarch
  • salt and pepper to taste
  • 1/2 C mayonnaise regular or light
  • 1/4 C Thai sweet chili sauce
  • 1/2 t white vinegar
On Cooking Day
  • 1 T olive oil
  • 2 bag frozen brown rice steamers
  • 6 C salad greens

Instructions

To Assemble
  1. Pat shrimp dry. Remove tails if desired. Place in a large zipper bag.
  2. Add cornstarch and season with salt and pepper. Zip to seal and gently toss to coat.
  3. Mix remaining ingredients in a medium container with a lid.
To Cook
  1. Heat oil in a wok or large skillet on high heat.
  2. Remove shrimp, dusting off any excess cornstarch and add to pan. Cook, stirring occasionally until shrimp are cooked, about 4-5 minutes.
  3. Remove from pan and place in a large bowl. Add half of the mayonnaise mixture and toss to coat. Serve with remaining mayonnaise mixture on the side for dipping.
  4. Cook rice according to package directions. Serve with green salad.

Best day 1 or 2

*Non seafood eaters, substitute with chunk chicken breasts or steak of your choice.  May require longer cook time.
