Baked Spinach Feta Chicken – CE

Ingredients

Prep
  • 2 lb boneless chicken breasts
  • 8 oz frozen chopped spinach
  • 8 oz cream cheese
  • 1 C shredded mozzarella cheese
  • 1/4 C milk
  • 1 t garlic powder
  • 1/4 t red pepper flakes
  • salt and pepper to taste
  • 1/2 C feta cheese
On Cooking Day
  • 2 bag frozen brown rice steamers
  • 20 oz frozen green beans

Instructions

To Assemble
  1. Place chicken in baking dish sprayed with non stick spray.
  2. Thaw spinach and squeeze dry. Add to large bowl along with next 6 ingredients and mix well.
  3. Spread over chicken cutlets and top with feta cheese. Cover with foil.
To Cook
  1. Uncover and bake in a 400 degree oven for 25-35 minutes or until chicken is cooked through.
  2. Cook rice and green beans according to package directions.
