Baked Honey and Lemon Halibut – CE

Ingredients

Prep
  • 1/4 C butter
  • 1/4 C honey
  • 2 T lemon juice
  • 1 T liquid aminos or soy sauce
  • 1 T minced garlic
  • salt and pepper to taste
  • 6 halibut fillets
On Cooking Day
  • 16 oz frozen broccoli
  • 2 bag frozen brown rice steamers

Instructions

To Assemble
  1. Melt butter and allow to cool. Place in a container with a lid along with next 5 ingredients.
  2. Place fish in a large zipper bag. Pour half of the marinade over fish. Zip to seal and squish to mix.
  3. Reserve remaining sauce in a container with lid.
To Cook
  1. Place fish onto a baking sheet sprayed with non stick spray. Brush with some of the reserved sauce. Bake at 400 for 12-15 minutes until fish easily flakes with a fork.
  2. Cook rice and broccoli according to package directions.
  3. Serve with remaining sauce.

*Non seafood eaters, substitute with chicken breasts. Cooking time will be longer (about 35 minutes depending on thickness of chicken)
