Baked Fish Piccata – CE

Ingredients

Prep
  • 6 cod filets or any white fish
  • 8 oz broccoli florets
  • 8 oz cauliflower florets
  • 2 T capers
  • 1/2 t garlic powder
  • 1 lemon
  • 1 T dried parsley flakes
  • salt and pepper to taste
  • 2 T butter
On Cooking Day
  • 2 bag steamers brown rice

Instructions

To Assemble
  1. Add cod filets to a large baking dish sprayed with non stick spray.
  2. Spread broccoli and cauliflower around the fish in the baking dish
  3. Zest and juice lemon and drizzle evenly over fish. Season with garlic powder, parsley and salt and pepper. Sprinkle capers on top of fish.
  4. Cube butter and dot over top of pieces of fish. Cover with foil.
To Cook
  1. Uncover and bake in a 375 degree oven for 20-25 minutes or until fish flakes easily with a fork.
  2. Cook rice according to package directions.
