Baked Fish and Chips – Anniversary

Ingredients

Prep
  • 3 baking potatoes
  • 1/4 C extra-virgin olive oil divided
  • 1 pkg Shake ‘n Bake seasoning mix original
  • 1/2 C bread crumbs
  • 1/2 C panko bread crumbs
  • 1 1/2 lb fish filets any white fish
  • salt and pepper to taste
  • 1/4 C mayonnaise
  • 2 T sweet relish
  • 1 t lemon juice
On Cooking Day
  • cooking spray
  • 6 C green salad

Instructions

To Assemble
  1. Cut potatoes into wedges lengthwise. Toss with half of the olive oil and coat in Shake ‘n Bake seasoning mix. Store in a container with a lid using wax paper or parchment between layers.
  2. Add panko and bread crumbs to a plate and mix.
  3. Cut fish into 1 1/2 inch strips, brush with remaining olive oil and season with salt and pepper. Press fish into bread crumb mixture coating both sides. Store in a container with a lid using wax paper between layers.
  4. Add the last 3 ingredients to a small bowl with a lid. Stir to combine and cover.
To Cook
  1. Spray two large sheet pans with cooking spray. Place the potatoes on the first pan and bake at 425 for 45 minutes. Place the fish on the second sheet pan and add to the oven for the last 20 minutes of cooking time.
  2. Serve with tartar sauce from prep day and green salad.
