Baked Dill Pickle Chicken Grilled Cheese – C

Ingredients

Prep
  • 1 C dill pickles
  • 3 C deli rotisserie chicken shredded
  • 1/2 C real bacon bits
  • 1/2 C ranch dressing
  • salt and pepper to taste
  • 12 slices bread
  • 1/2 C butter softened
  • 2 C shredded mozarella cheese
  • 2 C shredded cheddar cheese
On Cooking Day
  • 6 C salad greens
  • 1 1/2 C red grapes

Instructions

To Assemble
  1. Dice dill pickles and put in a large bowl.
  2. Add next four ingredients to bowl, and stir to combine.
  3. Butter one side of each slice of bread. Cut buttered bread in half vertically.
  4. Place half of the bread butter-side down in a casserole dish. Sprinkle 1 cup of mozzarella and 1 cup of cheddar on top of the bread.
  5. Spread chicken mixture on top of bread and first layer of cheese. Sprinkle remaining cheese on top of chicken mixture. Top with remaining bread, buttered-side up.
To Cook
  1. Bake at 400 for 20-25 minutes, or until bread is brown on top. Serve with salad and grapes.
