Baked Cod with Creamy Lemon Sauce – CE

Ingredients

Prep
  • 6 cod filets or any white fish
  • 6 T butter
  • 4 t lemon zest
  • 1 t garlic powder
  • 1/2 t dried parsley flakes
  • 1 1/2 C plain yogurt
  • 3 T lemon juice
  • salt and pepper to taste
On Cooking Day
  • 2 bag frozen brown rice steamers
  • 16 oz frozen broccoli and cauliflower blend

Instructions

To Assemble
  1. Add cod filets to a large baking dish sprayed with non stick spray. Season with salt and pepper.
  2. In a bowl mix together softened butter, HALF of the lemon zest, garlic, parsley. Dollop pieces of butter mixture on top of fish. Cover with lid or foil.
  3. In a small bowl with lid mix together yogurt, remaining lemon zest, and lemon juice. Season with a pinch of salt and pepper.
To Cook
  1. Uncover and bake in a 400 degree oven for 10-15 minutes (depending on thickness of fish) or until fish flakes easily with a fork.
  2. Cook rice and veggie mix according to package directions.
  3. Serve with reserved cream sauce on the side or dollop on top of fish before serving.
