Bacon Asparagus Pasta – CE

Prep
  • 16 bacon slices
  • 1 lb asparagus
On Cooking Day
  • 16 oz whole wheat linguine noodles or zucchini noodles
  • 1 C dry white wine
  • 1 C grated Parmesan cheese
  • 3 tomatoes sliced

Instructions

To Assemble
  1. Dice raw bacon into bite sized pieces and put in a small zipper bag.
  2. Trim the woody ends off of the asparagus and discard. Cut the asparagus stalks into thirds and store in a zipper bag.
To Cook
  1. Boil the pasta per package instructions.
  2. Cook the bacon in a large saute pan until crispy. Remove bacon from pan using a slotted spoon.
  3. Add the asparagus to the bacon drippings and cook for about 5 minutes or until it reaches desired doneness. Remove the asparagus from the pan.
  4. Slowly pour the white wine into the pan to deglaze using a wooden spoon to stir the wine and pick up the bits from the bottom of the pan. Cook for 5 minutes or until wine has reduced by about half.
  5. Drain pasta and add it to the saute pan along with the bacon, asparagus, and Parmesan. Toss to coat and serve with sliced tomatoes.
