Avocado Lime Fish Tacos – CE

Ingredients

Prep
  • 6 tilapia fillets or any white fish
  • 1 T lime juice
  • 1 t olive oil
  • salt and pepper to taste
  • 1/2 t onion powder
  • 1/2 t garlic powder
  • 1/2 t paprika
  • 1/2 t cilantro
  • 1/2 pint cherry tomatoes
On Cooking Day
  • 1 pkg corn tortillas or whole grain
  • 15 oz canned black beans
  • 2 bag frozen brown rice steamers
  • 2 avocados

Instructions

To Assemble
  1. Add all ingredients, except for tomatoes, to a large zippered bag. Zip to seal.
  2. Half cherry tomatoes and store in small container with lid.
To Cook
  1. Remove fish filets from bag and place on a baking sheet sprayed with non stick spray. Broil 3 – 5 minutes on each side or until fish flakes easily with fork.
  2. Remove fish from baking sheet, crumbling as you do so.
  3. Prepare beans and rice as directed.
  4. Serve fish on corn tortillas with sliced avocado and cherry tomatoes.

**Non seafood eaters, substitute with shredded chicken breasts.  May require longer cook time. Cook on day 1 or 2
