Asparagus Stuffed Chicken – CE

Ingredients

Prep
  • 6 boneless chicken breasts
  • salt and pepper to taste
  • 3 t Italian seasoning
  • 1 bunch asparagus spears
  • 1 C Italian shredded cheese
  • 1/4 C Panko breadcrumbs
On Cooking Day
  • 2 bag frozen brown rice steamers
  • 16 oz frozen broccoli and cauliflower blend

Instructions

To Assemble
  1. Lay chicken out between sheets of wax paper and flatten with a rolling pin or mallet. Season chicken with next 2 ingredients.
  2. Place 2-3 asparagus spears in each chicken breast and sprinkle with shredded cheese.
  3. Roll chicken up and place seam side down in baking dish sprayed with non stick spray.
  4. Sprinkle with breadcrumbs and cover dish.
To Cook
  1. Bake uncovered at 400 degrees for 30 min.
  2. Cook rice and broccoli according to package directions.
