Asian Beef Lettuce Wraps – IP1

Ingredients

Prep
  • 2 lb lean ground beef
  • 1/2 C frozen chopped onions
  • 1 T minced garlic
  • 1/2 C frozen chopped bell pepper
  • 1/2 C shredded carrots
  • 1/2 C soy sauce
  • 1 1/2 t Sriracha sauce
  • 2 t minced garlic
  • 1/2 t ground ginger
  • 1 1/2 T brown sugar
On Cooking Day
  • 1/4 C beef broth
  • 12 Romaine lettuce leaves
  • 1 green onion
  • 2 bag frozen rice, peas & carrots steamers

Instructions

To Assemble
  1. Add first 5 ingredients to large zipper bag. Zip to seal and squish around to mix.
  2. In a separate small bowl with lid (freezer safe), add remaining ingredients.
To Cook
  1. Press saute on Instant Pot. Cook beef mixture until just brown.
  2. Add beef broth and prepped sauce to Instant Pot.
  3. Pressure cook on high pressure for 4 minutes.
  4. Serve beef mixture in romaine lettuce cups with chopped green onion.
  5. Cook rice veggie mix according to package directions.
