Antipasto Pasta Salad – C

Ingredients

Prep
  • 1 pint cherry tomatoes
  • 6 oz marinated artichoke hearts
  • 4 oz sliced salami
  • 1/4 red onion
  • 5 oz black olives
  • 8 oz mozzarella cheese pearls
  • 2 t dried basil
  • 2 t dried parsley flakes
  • 1 C zesty Italian salad dressing
On Cooking Day
  • 10 oz rotini pasta
  • 1/2 C zesty Italian salad dressing
  • 10 C salad greens

Instructions

To Assemble
  1. Chop tomatoes, artichokes and salami into bite size pieces and add to medium bowl with lid.
  2. Slice onion into thin strips and add to same bowl along with remaining ingredients. Cover and shake well.
To Cook
  1. Cook pasta according to package directions and mix well with salami mixture.
  2. Add extra dressing if needed.
  3. Serve with salad.
