Ingredients

Prep
  • 16 oz green beans
  • 6 salmon filets 4-6oz. each
  • 2 T Dijon mustard Whole30 compliant – Primal Kitchen
  • salt and pepper to taste
  • 3/4 C almond meal
  • 3 T olive oil
  • 1/2 t garlic powder
  • 1/2 t Italian seasoning
On Cooking Day
  • 2 bag frozen cauliflower rice

Instructions

To Assemble
  1. Trim green beans and toss with 1 tablespoon olive oil and a season with salt and pepper. Place in the bottom of a 9×13 baking dish. Place salmon filets on top and around green beans. Brush salmon with dijon mustard and season with salt and pepper.
  2. In a small bowl mix together almond meal, remaining 2 tablespoons olive oil, garlic powder and Italian seasoning. Sprinkle mixture evenly on top of each piece of salmon. Cover.
To Cook
  1. Uncover and bake in a 400 degree oven for 15-20 minutes or until desired doneness.
  2. Cook cauliflower rice according to package directions.

**Non seafood eaters can substitute salmon for chicken cutlets. Cook at 375 for 20-25 minutes depending on thickness of chicken.
