Salt & pepper to taste
Add olive oil, salt & pepper. Toss well and cover with foil.
Place chicken in 9×13 baking dish. Bake chicken and foil covered vegetables in a 375 degree oven for 20-30 minutes or until chicken is cooked through.
Serve with a side of whole grain bread or another vegetable if desired.
If you prep this ahead, then you will have a really easy dinner for a busy weeknight. Just pop in the oven about 30-40 minutes before you want to serve it. Easy, healthy and full of flavor!
