This may be even better than Olive Garden Gnocchi Soup! Plus you know exactly what is in it. WHOLE FOODS! No hidden yucky stuff. I used chicken instead of sausage like OG does. Still ohhh so good and just a bit leaner. Only a bit though.
So easy to prep ahead. Just pour into the slow cooker in the morning and let it do all the work.
I hoarded the leftovers so I could eat it again for lunch the next day. It was SO GOOD!
If mushrooms are not your thing, you can always omit them and double the garlic and gnocchi. Hmmm. Now that I say that, I’m thinking I want that variation next time. Bring on the fall weather so I can make this again!
