Here is another good sandwich alternative for the brown bag lunches. My kids love these!
8 oz whipped cream cheese (because it is easier to mix and spread)
1/4-1/2 cup salsa
8 soft taco size flour tortillas
Of course you can use light cream cheese and whole wheat tortillas for a healthier option.
Mix the cream cheese and 1/4 cup of the salsa. (add more if needed) You don’t want the mixture to be too runny. Spread on each tortilla keeping a border around the edges. You’ll find out why you need that border when you roll them up!
Be gentle when rolling or all the filling will squeeze out.
I just put them all back in the tortilla bag to chill in the refrigerator. These can also be sliced into small pieces once chilled and firm.
Cut them in half and bag them separately for speedy lunch packing.

Yum! I make something similar, but using refried beans in place of cream cheese if anyone has a dairy allergy.
What a great way to add protein. I am trying the beans next time. YUM!
