Chicken Artichoke Bake

Don’t be scared by the artichokes, you can omit them and this recipe will still be a hit with the family! Pictured is without artichokes.  That is what everyone ate, except me….bring on the artichokes, LOVE THEM!

Ingredients-

4-6 boneless chicken breasts

14 oz can artichoke hearts in water, drained (optional)

½ C. low fat mayonnaise

½ C. grated parmesan cheese

1 C. Panko bread crumbs

Assembly directions-

Place chicken breasts in a 9×13 baking dish sprayed with non stick spray.

Rough chop artichokes (if using) and add to small bowl with next 2 ingredients.

Mix well and spread over chicken.

Sprinkle with bread crumbs.

Cover with foil.

 

Cooking instructions-

Bake uncovered in a 375 degree oven for 35 minutes or until chicken is cooked through.

Inside Out Chicken Cordon Bleu Casserole

All the flavor of Chicken Cordon Bleu without all the hard work.  You can toss this make ahead meal together in about 10 minutes for a quick go-to dinner later.

Ingredients-

5 boneless chicken breasts

Pepper to taste

1 t dried parsley

5 slices Swiss Cheese

2 oz low fat cream cheese

¼ C. whole wheat bread crumbs

5 slices deli ham

Assembly directions-

Place chicken in 9×13 baking dish sprayed with non stick spray.

Spread chicken with cream cheese. Or drop by spoonfuls (it’s faster)

Sprinkle with pepper and parsley.

Top with ham, Swiss then bread crumbs.

Cover with foil.

Cooking instructions-

Bake covered in 400 degree oven for 30 minutes or until chicken is no longer pink.  Uncover and bake 5 minutes to crisp bread crumbs.

YUM YUM!!!  This one was a crowd pleaser and when I say crowd I mean “my crowd” everyone at the dinner table liked it. Love a recipe that I know everyone will like.  I put those rare gems in the vault, or at least the favorites folder on the computer. That’s kinda like a vault, right?

Slow Cooked BBQ with Cowboy Cornbread

Here in Texas it can get too hot to grill out.  Here is a great BBQ recipe that is cooked in the slow cooker.  No sweatin’ here!

Ingredients-

2 lbs stew meat

1 C. frozen peppers & onions

1 C. frozen corn

½ C. BBQ sauce

14 oz can diced tomatoes

 

1 C. cornmeal

1 C. flour

1 T sugar

1 T baking powder

6 T butter, melted

2 eggs

1 C. buttermilk or milk

1 C. shredded cheddar cheese

¼ C. sliced jarred jalepenos (more or less, if desired)

 

Assembly Directions-

Add first 5 ingredients in large zipper bag.

Mix last 9 ingredients in a large bowl.

Use an ice cream scoop to scoop mixture into a 12 ct muffin tin.  Cover with plastic wrap.

*omit peppers if desired.

 

Cooking Instructions-

Pour meat mixture into slow cooker.

Cook on low 6 hours.

Uncover muffins and bake in a 425 degree oven for 20-25 minutes.

Now that is easy BBQ!

Cheese Enchiladas

I love enchiladas or any kind of Tex Mex or Mexican food.  I love to triple this recipe to freeze 2 for later.  Such a great last minute dinner that keeps me from eating out, because I really could eat Mexican food every day.  I am not exaggerating even a little. Just ask my kids.

Ingredients-

4 oz cream cheese

2 C. shredded Mexican cheese blend  + 1/2 C. for garnish

4oz can diced green chilies

12 corn tortillas

10-12 oz can mild enchilada sauce

 

Assembly directions-

Mix first 3 ingredients in a small bowl with electric mixer or spoon if you are big and strong.

Scoop mixture onto tortillas and roll up.  Steam the tortillas in microwave for easier rolling.

Place in 9×13 baking dish lined with foil and sprayed with non stick spray.

Brush enchiladas with sauce. {This step is important. It keeps the tortillas from drying out and cracking.}Reserve remaining sauce in small container with lid.

Cooking instructions-

Pour remaining sauce over enchiladas, sprinkle with 1/2 C. cheese and bake covered in a 375 degree oven for 25-30 minutes.

Mini Honey Mustard Meatloaves

I don’t know how I have never blogged this recipe.  I make it often and it seems to be a customer favorite.  I am not a fan of meatloaf and I LOVE this recipe!  It is really good.  I think you could even form this mixture in to burger patties and grill.  Oh my.  I must do that soon!

Ingredients-

3 T honey mustard or 1 1/2 T of honey + 1 1/2 T mustard

3 T ketchup

1 ½ lb lean ground beef

2 eggs

½ C. Panko crumbs

½ C. shredded Mexican cheese

Salt & pepper to taste

½ C. shredded Mexican cheese

 

Assembly directions-

Mix first two ingredients in small bowl.

Mix next 5 ingredients in a large bowl.

Or if you are short on time, just dump in all in and mix well.  It tastes great either way.

Spray muffin tin with non stick spray.

Scoop meat into 12 ct. muffin tin with ice cream scoop for equal portions.

Top each with sauce mixture and remaining cheddar cheese.

Cover with plastic wrap.

Pardon the blur.  Sometimes I work fast and forget to check the quality of the shot before I move on.  Please don’t hate me for my blurry picture of raw meat.

Cooking instructions-

Uncover meatloaves and bake in 450 degree oven for 20 minutes or until no longer pink inside.

These go great with mashed potatoes (I love the Ore-Ida Steam n Mash).

 

These freeze great too.  Use a disposable muffin tin and cover with foil.  Thaw and cook as directed.  Then dig in!

Black Bean & Corn Chimichangas

Baked not fried, these chimichangas will be a hit with the whole family.

2 cans black beans

1 C. frozen corn

1 C. salsa

1 t cumin

1 t dried oregano

2 C. shredded Mexican cheese blend

4-6 burrito size flour tortillas

 

Assembly directions-

Mix all ingredients except flour tortillas in a medium bowl.  Fill each tortilla equally and roll up like a burrito.  Store in large zipper bag.

 

Cooking instructions-

Place filled tortillas on a baking sheet sprayed with non stick spray.

Brush each with olive oil and bake in a 400 degree oven for 15-20 minutes or until golden brown.

black bean chimichanga ivServe with guacamole, sour cream or enchilada sauce.  I used green enchilada sauce because it is what I had on hand.  The tortillas will be crisp and flaky.  So much better than deep fried!

Bean Stuffed Peppers

I love Mexican food but trying to cut gluten and carbs can be challenging when GF.  This is a great gluten free dish.

Ingredients-

2- 15 oz cans black beans or refried beans (what I used here)
3⁄4 C. salsa
1-2 bags steamers brown rice

4-6 bell peppers (any color)

2 C. shredded Monterrey Jack Cheese

 

Assembly directions-

Cook rice in microwave.
Mix beans and salsa in a medium bowl.

Slice peppers in half, scoop out seeds and place in 9×13 baking dish.

Fill each pepper half with rice and beans. Top with cheese.
Cover with foil.

Bake covered in 350 degree oven for 30-35 minutes.

Orange Glazed Turkey Patties

Just a few simple ingredients make an amazing flavor for simple turkey patties.  Coming home to quick meals like this make that 1 hour investment at the beginning of the week so worth it!

Ingredients-

1 C.  orange marmalade

2 T soy sauce

1 t ground ginger

½ t crushed red pepper flakes

Assembly directions-

Mix first 4 ingredients in a small container with lid. This will be the glaze while cooking.

Pour ½ mixture into another small microwave safe container with lid.  This will be the sauce.

Cooking instructions-

Grill 4-6  preformed turkey burger patties* on indoor grill or brown in skillet.

Brush with glaze as they cook.

Warm sauce in microwave until bubbly.  Pour over cooked patties and vegetables.

*not needed until cook time.

These are so good, you better make double.  I usually eat 2!  They are turkey so that makes it ok, right?

Easy Crab Stuffed Bacon Wrapped Shrimp

Yes, it really is easy and so darn yummy!  I have been able to find these ready made crab cakes at the seafood counter at the grocery store.  They come in regular and spicy and are about $1.00 each.  I used 2 for 6 servings.  Every time I make these, they are gone in minutes and never any leftovers!

Ingredients-

1 1⁄2 lbs peeled extra large peeled raw shrimp
2 pre-made crab cakes
1 lb bacon

Assembly directions-

 

Pinch off about 2 teaspoons of crab cake for each shrimp.

Cut bacon into thirds.

Wrap each shrimp and crab with bacon. Store in large container with lid using wax paper between layers.

Cooking directions-

Place shrimp on large baking sheet in single layer. (use a wire rack if you have one).
Bake 450 degrees for 15-20 minutes until bacon is crisp and shrimp is cooked.

Herbed Pork Chops

Don’t let the simplicity of this recipe fool you.  These chops are amazing!

Ingredients-

3 lbs Pork loin chops

¼ C. lemon juice

1 T minced garlic

1 t dried rosemary

1 t dried thyme

2 t Dijon mustard

Salt to taste

Assembly directions-

Place first 7 ingredients in large zipper bag.  Zip and squish around to mix.

Cooking Instructions-

Remove pork chops from bag and grill on indoor or outdoor grill or brown in a skillet.
