Black Bean & Corn Chimichangas

Baked not fried, these chimichangas will be a hit with the whole family.

2 cans black beans

1 C. frozen corn

1 C. salsa

1 t cumin

1 t dried oregano

2 C. shredded Mexican cheese blend

4-6 burrito size flour tortillas

 

Assembly directions-

Mix all ingredients except flour tortillas in a medium bowl.  Fill each tortilla equally and roll up like a burrito.  Store in large zipper bag.

 

Cooking instructions-

Place filled tortillas on a baking sheet sprayed with non stick spray.

Brush each with olive oil and bake in a 400 degree oven for 15-20 minutes or until golden brown.

black bean chimichanga ivServe with guacamole, sour cream or enchilada sauce.  I used green enchilada sauce because it is what I had on hand.  The tortillas will be crisp and flaky.  So much better than deep fried!

Bean Stuffed Peppers

I love Mexican food but trying to cut gluten and carbs can be challenging when GF.  This is a great gluten free dish.

Ingredients-

2- 15 oz cans black beans or refried beans (what I used here)
3⁄4 C. salsa
1-2 bags steamers brown rice

4-6 bell peppers (any color)

2 C. shredded Monterrey Jack Cheese

 

Assembly directions-

Cook rice in microwave.
Mix beans and salsa in a medium bowl.

Slice peppers in half, scoop out seeds and place in 9×13 baking dish.

Fill each pepper half with rice and beans. Top with cheese.
Cover with foil.

Cooking Instructions-

Bake covered in 350 degree oven for 30-35 minutes.

Orange Glazed Turkey Patties

Just a few simple ingredients make an amazing flavor for simple turkey patties.  Coming home to quick meals like this make that 1 hour investment at the beginning of the week so worth it!

Ingredients-

1 C.  orange marmalade

2 T soy sauce

1 t ground ginger

½ t crushed red pepper flakes

Assembly directions-

Mix first 4 ingredients in a small container with lid. This will be the glaze while cooking.

Pour ½ mixture into another small microwave safe container with lid.  This will be the sauce.

Cooking instructions-

Grill 4-6  preformed turkey burger patties* on indoor grill or brown in skillet.

Brush with glaze as they cook.

Warm sauce in microwave until bubbly.  Pour over cooked patties and vegetables.

*not needed until cook time.

These are so good, you better make double.  I usually eat 2!  They are turkey so that makes it ok, right?

Easy Crab Stuffed Bacon Wrapped Shrimp

Yes, it really is easy and so darn yummy!  I have been able to find these ready made crab cakes at the seafood counter at the grocery store.  They come in regular and spicy and are about $1.00 each.  I used 2 for 6 servings.  Every time I make these, they are gone in minutes and never any leftovers!

Ingredients-

1 1⁄2 lbs peeled extra large peeled raw shrimp
2 pre-made crab cakes
1 lb bacon

Assembly directions-

 

Pinch off about 2 teaspoons of crab cake for each shrimp.

Cut bacon into thirds.

Wrap each shrimp and crab with bacon. Store in large container with lid using wax paper between layers.

Cooking directions-

Place shrimp on large baking sheet in single layer. (use a wire rack if you have one).
Bake 450 degrees for 15-20 minutes until bacon is crisp and shrimp is cooked.

Herbed Pork Chops

Don’t let the simplicity of this recipe fool you.  These chops are amazing!

Ingredients-

3 lbs Pork loin chops

¼ C. lemon juice

1 T minced garlic

1 t dried rosemary

1 t dried thyme

2 t Dijon mustard

Salt to taste

Assembly directions-

Place first 7 ingredients in large zipper bag.  Zip and squish around to mix.

Cooking Instructions-

Remove pork chops from bag and grill on indoor or outdoor grill or brown in a skillet.

Slow Cooked Salisbury Steak

Calling all meat & potato lovers!

This salisbury steak recipe is super easy.  It slow cooks all day in a gravy sauce.  No jarred gravy here.  This is from scratch and just as easy as a jarred.

If you have a meat lover in your house that thinks “clean eating” is a bunch of rabbit food.  Cook this for them with their favorite vegetables and it may win them over.  Clean eating does not have to be complicated or boring.

To take it up one more notch, you can use grass fed organic beef.

Ingredients-

4-6 formed hamburger patties

1 T steak seasoning (Montreal)

1 ½ C. frozen chopped onion

1/4 C. whole wheat flour or 1 T cornstarch for gluten free

1 ½ C. beef broth

Pepper to taste

Assembly-

Sprinkle hamburger patties with steak seasoning.

Store in large container with lid.  Use wax paper between layers.

Add last 4 ingredients to medium container with lid.

Cook-

Spray slow cooker with non stick spray.  Add meat patties.

Shake broth mixture well and pour over meat patties.  Cook on low for 6-8 hours.

Balsamic Steak with Cream Sauce

How about a 5 ingredient steak dinner than takes less than 10 minutes to  cook?  If that didn’t get your attention, maybe this will…..

 

Ohh yeah, now that is a great make ahead meal for a busy weeknight!  Now doesn’t that look better than a burger in a paper wrapper?

 

Ingredients-

1 ½ lbs sirloin steak

1/3 C. balsamic vinegar

Salt &  pepper to taste

 

8 oz herb & garlic cream cheese

 

Assemble-

Add first 3 ingredients to large zipper bag.  Zip and squish around to mix

Add cream cheese to a small microwave safe container with lid.

Cook-

Place steak on baking sheet at broil for 4-5 minutes per side or until desired doneness.

Warm cream cheese in microwave until creamy.  Serve over steak.

 

 

Add steamers mashed potatoes and heat some frozen corn and you have a steak dinner in about 15 minutes!

Now this is a grown up taco!  Easy to make and good enough to serve to your holiday guests.

Ingredients-

3 lb trimmed brisket

1 T steak seasoning (Montreal)

2 t minced garlic

1 T chili powder

 

Assemble-

Place first 4 ingredients in large zipper bag.  Zip and gently squish around to mix.

To cook-

Pour brisket mixture into slow cooker.  Add 2 C. beef broth and cook on low for 12 hours.  Shred with two forks.

Serve on corn or flour tortillas with sliced avocado and brie.  Y-U-M!!

Oven Beef Fajitas

I am a Texas girl and love Tex-Mex!  Here is an easy beef fajita recipe than only takes 12-15 minutes!

 

Ingredients-

2 1/2 lbs top round steak

2 bell peppers

1 large onion

 

2 T lime juice

2 t crushed garlic

1 T chili powder

Salt to taste

2 T olive oil

 

Assembly-

Cut steak, onion and peppers into thin slices and place in large zipper bag.

Add next 5 ingredients to same zipper bag.  Zip and squish around to mix.

Cook-

Place steak, peppers & onions on large baking sheet covered with foil.

Bake 450 degree oven for 12-15 minutes or until desired doneness.

Serve fajitas with 8-12 whole wheat flour tortillas or lettuce leaves with shredded cheese, plain yogurt, salsa, chips and avocado.

 

Gluten Free/Clean Eating Option-

Serve over salad greens.
