Southwest Shrimp Salad

This is a super easy salad.  You can even get fancy and layer it in a clear glass bowl.

 

 

Small bunch cilantro or parsley15 oz can black beans

 

1-2 lbs cooked peeled shrimp

1 T taco seasoning

2 T lime juice

 

1-2 bags chopped Romaine lettuce (or fancy greens)

1 C. frozen corn

1 pint grape tomatoes

1 C. shredded Mexican cheese blend

 

 

Rough chop cilantro and drain/rinse black beans in a colander. Set aside.

Toss Shrimp in a medium bowl with lime juice and taco seasoning.  Set aside.

 

In a large bowl (glass if you have it) layer:

Romaine

Black beans

Corn

Tomatoes

Cheese

Shrimp

Cilantro

Maybe even garnish with a few lime wedges if you are in the mood.

Cover and chill until ready to serve.

 

To serve: chop 1-2 avocados

Serve salad with light ranch dressing or salsa…..or both!
