Did you know you can use your slow cooker to roast vegetables?
I like to make a big batch of veggies to use throughout the week.
Just season any combination with olive oil, salt & pepper. Chop into bite size pieces and store in a zipper bag until ready to cook.
Here are a few good combinations-
2 yellow squash
2 bell peppers (any color) keep these in large chunks or they will over cook.
1-2 lbs fresh green beans
3-4 red potatoes
1 lb baby carrots
2 russet potatoes
1 bunch asparagus
You can use almost any combination your family likes. Just toss in the slow cooker and cook on low for 4-6 hours or high 3-4 hours.
