Ingredients

Prep
  • 4 salmon fillets
  • 1 zucchini
  • 2 summer squash
  • 2 T olive oil
  • 2 T lemon juice
  • 1 t ground cumin
  • 2 t oregano
  • 2 t sesame seeds
  • 1 t salt
  • 1/4 t crushed red pepper flakes
On Cooking Day
  • 2 bag frozen brown rice steamer

Instructions

To Assemble
  1. Cut the salmon, zucchini and summer squash into large bite-sized chunks and place in large zipper bag.
  2. Add all other ingredients into bag with salmon and veggies. Zip to seal. Shake gently and squish to combine.
To Cook
  1. Pour contents of bag onto a baking sheet sprayed with non stick spray and broil for 3 – 5 minutes on each side or until salmon is flakey and veggies are crisp-tender.
  2. Cook rice according to package directions.

*Non seafood eaters, substitute with chicken breasts or steak of your choice.  May require longer cook time.
