Parmesan Roasted Salmon and Broccoli
Ingredients
  • Prep
  • 2 T mayonnaise
  • 2 T lemon juice
  • 1 t minced garlic
  • 1/4 C Parmesan cheese
  • 1/4 C almond meal or bread crumbs
  • 1 T fresh parsley chopped
  • 1/4 t dried thyme
  • 2 T olive oil
  • 4 salmon filets
  • 16 ounces broccoli florets
  • 2 T olive oil
  • salt and pepper to taste
  • On Cooking Day
  • 2 bags frozen rice steamer
Instructions
To Assemble
  1. Mix first 9 ingredients in a small bowl
  2. Place salmon filets in a storage container.
  3. Spoon and spread cheese mixture evenly over each filet and cover with lid.
  4. Add broccoli florets, olive oil, salt & pepper to a large zipper bag. Zip and shake to mix well.
To Cook
  1. Spray large baking sheet with non stick spray and place salmon filets along center of pan about an inch apart.
  2. Pour broccoli around salmon pieces.
  3. Bake 400 degree oven for 12-18 minutes or until desired doneness.
