I posted about how I cook chicken in bulk HERE. I also cook ground beef ahead of time too. Even if I do not use it for my cooking hour recipes, I will use it for quick tacos, spaghetti, etc. You can easily cook up to 5 pounds at once in a large stockpot. Here are some equivalencies of the cooked vs. raw meat. This might be helpful when planning ahead. Remember, you can always use a deli roasted chicken when you don’t have time to precook. Buy several when they are on sale and shred them all at once and freeze to save even more time.
1 lb. ground beef raw = 2 1/2 C. browned meat
2.5 lbs raw boneless skinless chicken breast = 6 C. cooked cubed
Whole 3 1/2 lb cooked chicken = 4 C. shredded or cubed
