Pepper Steak Patties

The trick here is to use the frozen bell peppers.  They have a much softer texture and absorb more flavor.   Kids are more likely to eat them this way…..well, mine did anyway.

4-6 preformed hamburger patties

3 T flour

Salt & pepper

 

12-16 oz frozen bell peppers

14 oz can diced tomatoes with basil

1 T balsamic vinegar

1 t soy sauce

 

Pour flour, salt & pepper on a paper plate.

 

To Assemble:

Dredge each hamburger patty in flour (both sides) and place in 9×13 baking dish.

Pour bell peppers over top.

Mix last 4 ingredients in a small bowl

and pour over peppers.

Cover with foil.

To cook:

Bake covered in 425 degree oven for 45 minutes or until meat is cooked through.

Serve with steamers mashed potatoes and green beans.
