You can easily make these little sandwiches any variety you would like.
Ham & Swiss Cups with Homemade Creamy Tomato Soup!
12 ct. muffin tin
12 slices of bread
1/2 lb deli ham
3 slices of cheese
flatten each bread slice with hand and cut in half
Place 2 sliced in muffin cup in an “X” pattern.
Press to fit.
Tear ham into pieces and fill each cup evenly.
Cut each cheese slice into 4 pieces.
Top each cup with slice of cheese.
Cover with plastic wrap until ready to cook.
Bake uncovered in 450 degree oven for 12-15 minutes.
Creamy Tomato Soup
2- 14 oz cans chicken broth chicken broth
28 oz can crushed tomatoes
Salt & Pepper to taste
1 1/2 t dried basil
1 C. heavy cream
Mix first 4 ingredients in large container with lid. (if making ahead)
Heat soup to a boil in saucepan over med/high heat. Stir in heavy cream and simmer 15 minutes. Puree soup in blender if desired or use a hand blender.
Serve with Ham & Swiss Cups.
